Beef Stew

Beef stew is a hearty and delicious meal that is perfect for those cold winter nights. This stew is made with tender pieces of beef, vegetables, and a flavorful broth. 

Ingredients

  • 2 pkg stewing beef (approx. 2 lb)
  • 1 tbsp olive oil
  • 4 cloves garlic, finely minced
  • ½ onion, chopped
  • 2 cups carrots, cut in ½ inch pieces
  • 1 cup celery, cut in ½ pieces
  • 1 cup russet, Yukon gold or red potatoes cut into 2-3” cubes
  • ¼ cup tomato paste

  • 1 bay leaf
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1 tsp thyme
  • 4 cup beef broth (or half broth/half water is fine too)
  • 3TBLP. Cornstarch
  • ¼ cup Water
  • 1 cup frozen peas

Directions

Instant Instructions (this is our favourite method)

  1. Set instant pot to sauté for 10 minutes. Heat olive oil. Brown stew meat on all edges (about 5 minutes). Add onion/garlic and cook for additional 5 minutes.
  2. While meat/onions brown, cut all other vegetables/potatoes.
  3. After the meat has browned – add all remaining ingredients EXCEPT peas and stir until combined.  
  4. Cover and set to sealing. Manual pressure for 25 minutes.
  5. It will take the Instant Pot about 10 minutes to come to pressure.
  6. When it’s finished cooking, quick release the pressure. Discard bay leaf, add cornstarch/water mixture. Heat to thicken, stir in frozen peas & enjoy!


Crockpot Instructions

  1. Heat olive oil in pan and brown stew meat + onion/garlic. This step is not necessary but will add an extra layer of flavour.
  2. While meat/onions brown, cut other vegetables.
  3. After the meat has browned, add other ingredients EXCEPT peas and stir until combined.
  4. Cover and set to LOW for 6-8 hours.
  5. When finished cooking, discard bay leaf, add cornstarch/water mixture, stir in frozen peas & enjoy!
