One Pan Cheesy Chicken with Broccoli & Rice

Ingredients

  • 1 TBLP olive oil
  • 1 lb boneless skinless chicken breast, cut into cubes
  • Salt & pepper 
  • ¼ cup onion, diced
  • 1 clove minced garlic
  • 1 cup brown rice

  • 2.5 cups chicken broth/stock
  • 4 cups broccoli, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • 1.25 cups sharp cheddar cheese, grated

Directions

  1. In a large frying pan over medium heat, add olive oil and chicken pieces. Sprinkle with salt and pepper and cook 5-6 minutes until no longer pick and cooked through. Remove from pan and set aside.
  2. Reduce pan heat to medium low. Add onion and garlic to the pan. Saute until tender. Add the rice and continue to toast the rice for a minute or two. Pour in the chicken broth and simmer with lid on for 20 minutes.
  3. After the rice has been cooking for 18 minutes, add the broccoli to the rice and put lid back on. This will steam the broccoli.
  4. Once the rice is finished cooking, add salt, pepper, and paprika. Stir to combine. Add the chicken back and stir. Top with cheese and put lid back on for a few minutes, until cheese melts. Serve.
