Easy Baked Brisket

Prep Time: 20 minutes

Cook Time: 3 hours 55 minutes

Overnight Seasoning: 8-12 hours

Servings: 8 people

Ingredients

  • ½ beef brisket (approx. 3 lbs) from Breault Family Farm
  • 4 tsp kosher salt
  • 2 tsp freshly ground black pepper
  • ½ tsp cayenne pepper
  • 1 Tbsp smoked paprika

Braising Liquid:

  • 2 Tbsp butter
  • 1 large yellow onion, sliced
  • 1 tsp kosher salt
  • 4 garlic cloves, sliced
  • 1 cup apple juice

Directions

  1. Season both sides of brisket generously with salt, pepper, cayenne and smoked paprika. For best results, place brisket over an aluminum foil “rack” set over a plate, and refrigerate, uncovered, 8-12 hours.
  2. Preheat oven to 325 degrees F.
  3. Melt butter in pan, medium heat. Add onion and salt. Cook and stir until translucent, about 5 minutes. Stir in garlic and apple juice. Increase heat to high and boil until liquid is reduced by about half, about 3 minutes.
  4. Transfer half of the apple-onion mixture into a baking dish. Place brisket fat-side up on top; cover with remaining apple-onion mixture. Cover baking dish with foil.
  5. Bake in preheated oven for 1 hour 30 minutes. Reduce oven temperature to 250 degrees F and bake until fork-tender, about 2 hours 15 minutes.  Check for doneness after 2 hours.
  6. Transfer brisket to a plate and tent with foil.
  7. Pour the onions and braising liquid into a large glass measuring cup or bowl. Skim fat off the top. Puree with a stick blender to create a gravy.
  8. Slice brisket across the grain and serve with the onion gravy.


  • Note: If you want to use a whole brisket, this method will work as shown, but you may want to give it a little more time at the end to ensure it’s fork tender.
  • Tips: Substitute apple cider for the juice if you prefer.
  • Serve brisket with warm brioche buns, for an exceptional taste experience!!
