Smoked Ham & Rice

Ingredients

  • 1 TBLP olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • ¼ tsp. cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper

  • 2-3 lb smoked ham, shaved or sliced in bite size pieces 
  • 1.5 cups brown rice
  • 3 cups chicken broth
  • 1 cup tomato sauce
  • 1 cup thinly sliced green pepper

Directions

  1. Heat olive oil in a large skilled over medium heat, then add the onion and cook until soft.
  2. Add garlic, cayenne pepper, salt and pepper and stir/cook for 2-3 minutes.
  3. Add the smoked ham pieces and cook for another 3-4 minutes to allow the ham to become fragrant.
  4. Stir in the rice and toast it for 5-6 minutes, then pour in the chicken broth and tomato sauce. Stir to combine.
  5. Bring the broth to a boil, then reduce heat to low medium. Cover with a lid.
  6. Let it steam for 20 minutes or until there is very little moisture left in the pan, and the rice is cooked through.
  7. Add the green pepper slices during the final 5 minutes of cooking time.
  8. Remove the pan from the heat and let it sit for 5-6 minutes, then fluff the rice and serve.
